An important feature of chanterelles is that they are resistant to the appearance of insect larvae. And all because of the presence of hinomannose. This element is harmful to parasites and insects. For the human body, it is completely harmless. Chanterelles are considered an excellent source of vitamin D2 and 8 essential amino acids. They also contain other elements:
- zinc;
- vitamins A, PP and B1;
- copper.
In terms of vitamin A, these mushrooms can successfully compete with carrots. It is good for vision and is considered an excellent preventative for eye diseases. It also has a beneficial effect on nails, hair and skin. As has been noted, these mushrooms can relieve simple skin inflammations and help get rid of infections.
Chanterelles are not only brightly saturated in color, but also have an interesting taste. They are usually fried or boiled, rarely marinated. To prevent the mushrooms from becoming bitter, which happens if they grow in spruce forests, they are lightly boiled, the water is drained and cooking continues. It is believed that when boiled, chanterelles partially lose their aroma and taste, so it is recommended to fry them.
